    Peru argues with Chile about a lot of things, but the pisco sour is the argument worth tasting. In this hour-long class our bartender shows you the real ratios, the correct pisco for each style, and the shake that gives the drink its foam — then you make your own and drink it.

    What to expect

    The class starts with a tasting of three pisco varieties — quebranta, italia and acholado — so you can taste why the grape matters before it ever meets lime juice. Our bartender explains the difference between a pisco sour, a chilcano and a maracuyá sour, and why egg white and Angostura are not optional.

    Then you shake your own. Everyone gets a shaker, fresh Peruvian limes, syrup and pisco, and you leave with the recipe written down and the muscle memory to repeat it at home. It runs in the bar at Black Llama Hostel Cusco, two minutes from the Plaza de Armas.

    Popular before a night out — plenty of people take the class at sunset and stay for the bar afterwards.
